Friendship, Waterfalls, Caves, and Late Nights

This weekend was a girl’s weekend.  Seven of us decided to get a condo and take a little trip to St. George, Utah.  We were hoping to get out of the cold and enjoy some sunny weather by a poolside.  Well, it was sunny most of the time, but still too cold for the pool, but that did not matter.  I love that we are all so different and that we can get together and enjoy our differences and have a blast with one another.

I stayed up later then I have in a long time.  We played games well into the night, got to know one another more intimately, and just enjoyed each other’s company.  We laughed together, we cried, we listened, we cared for one other.  Nothing could be better then that.  To live is to give.

Well, if we were in St. George, I needed to get out and hike to enjoy God’s creations.  We heard there were some waterfalls that we should check out, that are created from a reservoir runoff.  So off we went.  We headed to Gunlock State Park, Ivin’s Reservoir.   Locals report, this water fall has not flowed for about 10 years, due to prolonged drought.  This year however we have had both rain and snow, so there has been plenty of water.  I feel grateful to have witnessed such a beautiful sight.  This is not really a hike, but more of a meander, all levels of ability can visit this gem.

To be honest, my body craved a more intensive hike.  I needed to sweat, maybe get a little out of breath, and really enjoy the outdoors if I had the chance.  Unfortunately, of my 6 friends only 2 were interested in exploring another trail, but I was okay with that.  We all have our own interests and that is what was so great about being with these women, we appreciate our differences and love each other.  For the next adventure we headed out to Paradise Canyon Trail to check out Scout Cave.  It was only a 2.4 mile hike.  All Trails rates it as moderate, but I rate it easy.  It does not have any shade, so in the summer, it would be hot and unpleasant, but this early spring weather was perfect.  The cave is fun to explore.  There is an easier route and less distant hike that will take you right to the cave if you go from Snow Canyon.  This might be a better route if you have younger kids.

Once we finished our hike it was time to pack up and head home.  We carpooled in a few different cars so, unfortunately, we did not all take the road trip back home with each other.  I was one of the drivers and only had one other friend in my car so I felt inspired to make a few stops on the way home.  Our first stop was the Beaver Creamery.  The creamery has been around for 65 years and just recently expanded and updated including a new shop.  The architecture is amazing.  They have cheeses, , ice creams, a grill, a little grocery store to buy local food.  It is a most stop, if you are a dairy lover.

It usually takes about 3.5 hours to drive from St. George back to our little town.  However, it was taking us a little longer because of the extra stops (it took us 7).  We were getting hungry by the time we hit Fillmore, and if you remember an earlier post  their was an awesome little taco shop, so we had to stop.  They were closed, but across the street in another little garage there was another person cooking up some food .  Tacos, burritos, quesadillas, and ect.  I had to give it a try.  It was fantastic.  He is open Tuesday-Sunday.  They do not go shy on anything.  If you are hungry and want some authentic Mexican food, this is a stop you need to make if you are passing through Fillmore. 95 W 200 South, Fillmore, UT

It was so nice to be around such wonderful women this weekend.  I truly love these ladies and appreciate how they have helped me grow.  I would encourage you to take time and enjoy the people you have in your life and let them know how truly grateful you are for them.
